INGREDIENTS:

  • 1 onion
  • 3 cloves minced garlic
  • 1 bay leaf
  • 2 tsp freshly graded ginger root
  • 1 cup pure peanut butter
  • 1 tbs honey
  • ¼ tsp cayenne pepper (or more)
  • juice of 1 lemon
  • 1 tbs apple cider vinegar
  • 3 cups water (or broth)
  • 1 tbs salt
  • a dash of tamari
  • 2 tbs butter (or ghee)

DIRECTIONS:

  1. Sauté onion, garlic, bay leaf, and ginger root until onion becomes translucent.
  2. Add remaining ingredients and simmer on low heat for about 30 minutes.
  3. This sauce can be served over veggies, tofu, chicken,  or whatever sounds good to you!
