INGREDIENTS:

  • 4 cups leeks
  • 1 cup onion
  • ¾ cup carrot
  • ½ cup orzo
  • 6 cups broth
  • 2 large eggs
  • 3 tbs lemon juice
  • fresh mint, parsley, and oregano

DIRECTIONS:

  1. Sauté leeks, carrots, and onions in soup pot until onions become translucent.
  2. Add 6 cups broth.
  3. Simmer 10 minutes.
  4. Add orzo & cook until soft.
  5. Turn heat of soup.
  6. Whisk eggs and lemon juice together in a bowl, and then add the combination to the soup pot.
  7. Top with fresh mint, parsley, & oregano.
