INGREDIENTS:
- 4 cups leeks
- 1 cup onion
- ¾ cup carrot
- ½ cup orzo
- 6 cups broth
- 2 large eggs
- 3 tbs lemon juice
- fresh mint, parsley, and oregano
DIRECTIONS:
- Sauté leeks, carrots, and onions in soup pot until onions become translucent.
- Add 6 cups broth.
- Simmer 10 minutes.
- Add orzo & cook until soft.
- Turn heat of soup.
- Whisk eggs and lemon juice together in a bowl, and then add the combination to the soup pot.
- Top with fresh mint, parsley, & oregano.
