Fresco Sauce: 

  • 1/8 cup fresh chopped garlic,
  • 1 tsp kosher salt,
  • 1/8 cup balsamic vinegar,
  • 1/8 cup sweet white wine,
  • 1/2 cup extra virgin olive oil.


  1. Cook a package of bow tie pasta and drain. 
  2. Heat 3 tablespoon olive oil in a frying pan until very hot. 
  3. Sauté 1 cup cubed roma tomatoes or halved cherry tomatoes, 1/3 cup chopped red onion, and pasta. 
  4. Add 1 package fresh spinach and cook until wilted. Serve with freshly shaved parmesan cheese.
